Macaroni and Cheese Week...and...when life gets in the way

You know how you sometimes have those weeks that are SO busy you cannot even think of blogging?  Well, this week was like that.  Who am I kidding.  Every week is kinda like that.  This was no exception.  But I remembered to take pictures!

So what I have for you, my friends, is not recipes.  It is photos and descriptions, so you can see what is seasonal and delicious in Southern California in October.
Scrambled egg with chicken and homemade salsa and cheese, with Martha Stewart's Soda Biscuits on the side (this was breakfast):

Macaroni and Cheese from America's Test Kitchen.  I added chicken and peas and cut the cheese a little.  And I didn't have whole milk, so I used powdered and mixed in some half and half.  There are 14 Tbsp of butter in this tray.  It was delish.

Roasted Eggplant, Peppers, and Onions from Farmgirl Fare

Focaccia from the leftover pizza dough (Bread Machine)

Mac and Cheese, Focaccia, diced fresh tomatoes and garlic and avocado for the focaccia, broccoli.
Lunch: Mac and Cheese and Roasted Red Kuri Squash

Kid's lunch: Cantaloupe, Broccoli, PB&J, Cheese
Spicy Greens Salad and more Mac and Cheese

Fauxtmeal - I kinda mixed three recipes - it was really good.  Basically an egg, almond milk, almond meal, walnuts, banana, cinnamon, butter
What it looks like in the bowl.  Ignore the bowl, all the others were dirty.  Lots of soup eating in the house this week!  (Ginger carrot turnip soup)

I can certainly relate to hectic weeks. We have our fair share of those. I love your dinner ideas. Thanks for sharing.

no kidding every week is crazy but blogging makes you feel like you have so "me" time doesn't it? love your meals especially the eggplant and mac and cheese dishes. oh and the bfast with the eggs-yum! hope this week is not so hectic for you. i have a busy one for sure :(
