Goal: Use my cookbooks!

I've set a goal to try and cook AT LEAST one recipe from each of the cookbooks on my shelf.  Bonus points if I like it.   Here is where I keep the list and the date.

Chocolate Pudding - Wildly Affordable Organic by Linda Watson - August 2016 (not good enough to repeat)

California Fiesta Quinoa Salad - The Passionate Vegetable by Suzanne Landry - August 2016 (this is SOOO good and a definite favorite)

Broccoli Brown Rice Cashew Casserole - The Glycemic Index Diet for Dummies by Meri Raffetto
- This was simple and delicious

Levantine Carrot Salad - Still Life With Menu by Mollie Katzen
- This was delicious, even though I goofed.  I didn't read the full recipe, and shredded the carrots (they were supposed to be match-sticked and steamed).  I also skipped the sauce...who has time for that?

Caponata - Complete Vegetarian Kitchen by Lorna Sass (12/3/16) - one of my faves.  And nobody else likes it so it's all for ME ME ME ME.

Smoked Eggplant - World Vegetarian by Madhur Jaffrey (12/4/16) - this was really delicious

Chicken stew with cheddar dumplings - One Pot of the Day by Kate McMillan (12/4/16)

Vegetable Tagine from The New Fast Food by Jill Nussinow (12/3/17).  I got a new cookbook!  This was the first recipe I tried, and it's a KEEPER.
